Nasi Goreng (Indonesian Fried Rice)
Serves 25 | Estimated Time: 30-40 Minutes
Ingredients:
20 cups cooked rice (preferably day-old)
25 eggs
10 cups frozen mixed vegetables
20 cloves garlic, minced
2 1/2 cups soy sauce
2 1/2 cups cooking oil
Optional: chili sauce and green onions
Instructions:
1. Heat oil in large pans or griddles; sauté garlic until fragrant
2. Add eggs and scramble
3. Add vegetables and rice in batches
4. Season with soy sauce; stir-fry until hot and evenly mixed
Notes:
-Cook rice ahead to save time
-Divide into stations to avoid overcrowding pans
