Gado-Gado (Vegetables with Peanut Sauce)
Serves 25 | Estimated Time: 25 Minutes
Ingredients:
20 cups mixed vegetables (broccoli, cabbage, carrots)
25 hard-boiled eggs, halved
4 cups peanut butter
1 1/2 cups soy sauce
1 1/2 cups lime juice or vinegar
Hot water, as needed
Instructions:
1. Steam or microwave vegetables until tender
2. Whisk peanut butter, soy sauce, lime and hot water
3. Arrange vegetables and eggs; spoon sauce over top
Notes:
-Can be fully no-stove if needed
